Neapolitan Tradition Reinvented
Founded out of passion for the art of Italian baking, Pizzeria Rosette is the result of a culinary journey between Naples and Montreal. Our philosophy is built on absolute respect for tradition, while adding a contemporary touch.
Every morning, our pizzaiolos prepare our dough using only premium Italian Tipo 00 flour. We let the dough rise slowly for a minimum of 48 hours at controlled temperature, giving it its incomparable lightness and characteristic generous crust bubbles.
When it comes to ingredients, we make no compromises. Our San Marzano D.O.P. tomatoes grow in the volcanic soils of Mount Vesuvius, our mozzarella di bufala and fior di latte are imported fresh from Italy, and our extra virgin olive oil is cold pressed. Everything is cooked in 60 to 90 seconds in our copper wood-fired oven at over 450°C (850°F).
